Berkshire pork is renowned for its richness, texture, marbling, juiciness, tenderness, and overall depth of flavor. It is thought by many to be the Kobe beef of pork. It is said to have a very specific taste, not generic and bland or mild like regular pork.

Our pigs are fed on pasture and fed locally milled and sourced grains to supplement the grass.

Your hogs will be butchered at approximately 6 months and around 250 lbs. Hanging weight is usually around 72% of live weight so about 180 lbs of hanging weight. Whole hogs and half hogs are priced at $4.25/lb of hanging weight plus butcher fees that are paid to the processor and are $400-500/hog, depending on the cuts that you choose, and are paid to the processor.

How much meat is a whole hog?
A 6-month-old hog weighs about 280 lbs.
Hanging weight is about 72% or 200 lbs.
Useable meat from this is about 160 lbs
This includes approximately

60 lbs of chops, ribs, and steaks

30 lbs of ham

25 lbs of sausage

20lbs of bacon

Extras such as the tail, lard, back fat, heart, feet, tongue, kidneys, liver, and hocks
This meat takes about 4 cubic feet of freezer space and will feed a family of four that eats a moderate amount of pork for 12 months.
That's $100/month including processing costs!

You can half this amount for a half hog.

If you are buying a whole hog please feel free to use any local butcher and we will deliver the hog to the butcher for you and you can work with the butcher to choose your cuts and pay them for processing directly. Mathey farms will send you an invoice base on the butchered weight minus the deposit.
